This recipe is low in histamine, oxalates and is delicious! You can easily mix this up to add other vegetables or meat and have something that feels very different. It's so quick and easy you can make lunch or dinner in no time.You can also make this a noodle dish with no soup by using 1/8-1/4 cup of stock instead of a whole cup.
Add the olive oil, chicken, choy sum, salt and broth to a small pan and bring to the boil.
Lower to a simmer and cook for 8 minutes or until vegetables look cooked through.
Meanwhile cook your rice noodles in boiling water to packet directions (usually around 6 minutes).
Drain your noodles and add to serving bowls. Pour over the cooked chicken and vegetable broth.
Top with a drizzle of garlic oil, parsley or coriander leaves.
Notes
Toppings with tolerated herbs such as cilantro (coriander) leaves instead of parsley give the dish a more Asian flavour.Use the low histamine chicken broth recipe to get a great result!
